Gluten free Chocolate Chip Banana Bread

As I racked my brain for what to cook for the week, the only thing that I kept thinking of was baked goods. What baked good comes next? On my list of to-dos, there are

coconut sugar cookies, banana bread, chocolate chip cookies, Nutty cookies, chocolate crack and Divinity just to name a few. Over the years I have made many different cookies, candies and breads and have found a few favorites, but I also love to try new recipes, (as long as I ‘ve got what I need). I do have a go to bread which I find pretty simple and easy and everyone loves it. I have made it gluten free this time (not sugar free or paleo) for the eaters out there that do best without gluten-so I thought I would share it all with you.

Grab a loaf pan or you can make into muffins, just decrease baking time for muffins. When doing muffins I like to bake the muffins for the first 5 minutes at 400, then adjust temperature down to 375 for the remainder of the time. about 10-15min

For the Loaf: Preheat oven to 350

What you will need:
3 ripe bananas- the riper the better
1 cup sugar- the riper the bananas the less sugar you will need.
1 cup natural applesauce (nothing added)
1/2 c oil- use canola or grapeseed oil
1 teaspoon vanilla
1 teaspoon cinnamon
1 c rice flour
1 c almond meal
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
splash of liquid -I usually use a bit of water to rinse out apple sauce cups.
1/4c-1/2c chocolate chips
Mash bananas and sugar, add vanilla, oil, applesauce then add dry ingredients. Careful not to overmix. Add in chocolate chips then put into loaf pan and back about an hour at 375.
insert toothpick to check doneness-should come out clean when done.
