Deliciousness in my mouth!

PB & J Burger!
1 1/2 cups blackberries, chopped
2 slices cooked bacon, chopped
1/2 lemon, squeezed
1/4 teaspoon fresh grated ginger
2 ground beef patties
salt & pepper, to taste
1/4 cup almond butter
2 scallions, thinly sliced
In a small bowl, mix the blackberries, lemon juice, and ginger; set aside.
Cook your beef patties which ever way is your favorite. I like to cook them on the stove in a skillet.
While the burgers are cooking, heat a small saucepan over medium-high. Pour the berries and their juice into the pan and sauté them until they’re very soft and syrupy. Allow to cool a bit.
Put the almond butter in a microwave-safe dish and heat until thinned, about 40 seconds.
When the burgers are done, top each with 1/2 of melted almond butter and 1/2 of the blackberry “jelly,” then sprinkle with scallions and bacon.

  1. I can’t imagine peanut butter (or almond butter) on a burger, but this looks soooo good I will just have to try it!

  2. I raised my eyebrows at the thought of almond butter and meat too …. but trust me … it’s GOOD!!!

We’ve been on the Paleo challenge for almost 30 days and it’s becoming much easier to just experiment with our foods and stop over-thinking “traditional” meal times and expectations. Thanks for this site and all the wonderful recipes. And again, we recommend this! :)
