Rise and shine!

Some people might say that I take too long to get ready in the mornings, but I love my morning routine. I always get up 2 hours before I have to be anywhere. This gives me time to start my day off in a relaxed and calm state of mind. If I don’t have enough time, I’m rushing around and feel scattered and stressed out for the rest of the morning. I love having time for a long, hot shower, time to do a little make up and fix my hair, time for cooking breakfast and sitting down to eat with my honey and a little bit of lingering time to finish sipping my morning tea. Ahhhhhhhh…bliss :)
Nutted Fish
1 piece of white fish of choice (or more depending upon how many you’re serving)
1 egg per every 2 servings
salt, pepper, and garlic, to taste
1/4 cup pecans, ground into a chunky meal in a food processor or blender
1/4 cup almond meal
Preheat oven to 400 degrees and make sure fish is defrosted if using frozen.
While heating, whisk eggs until smooth in a bowl and put pecan meal mixture on a large plate.
Dip each piece of fish in egg and then dredge in pecan meal mix. Nut mixture will not stick as well as flour and this is ok. You should have some leftover nut meal after lightly coating the fish.
Carefully place each piece in a large baking dish.
After all fish is in dish, put any remaining nut meal mixture on top of fish and pat down.
Put fish into oven and bake 10-20 minutes until cooked through and starting to flake.
Serve atop salad or beside vegetables.
