Oven baked salmon with onions, lemon and thyme

I’ve been a little MIA from SCHQ. My apologies, no excuse other than the lame excuse of “I’ve been busy.” Life is good though. I’m training for So Cal Regionals coming up in less than a month in Pomona. Working on CrossFit LA kids program and coaching classes. You’re all still here reading the blog, looking for more food inspiration. (so we best keep it coming)

One of my favorite things in life is hearing the positives about people in regards their health. I love it when people can actually feel the difference in their body when they eat or do not eat a specific food. I know some of you have found great luck in removing dairy, some don’t notice it at all. Some of you do better without grains, limiting meat or not eating meat at all. I would love to hear from some of you about what foods make you feel best or worst.
I hope the below recipe makes you feel good, because it did for me.
Baked salmon with onions, lemon and thyme
I slab Salmon- skin on
1 lemon- sliced
1/2 lemon-just use juice
1 onion -sliced
olive oil
fresh thyme
salt and pepper
preheat oven to 375
On a cookie sheet lined with foil place salmon skin side down. Drizzle with olive oil and season with salt and pepper. Cover with sliced onions and lemons and sprinkle fresh thyme on top and drizzle with juice of half the lemon. Bake in oven for 15-20 minutes. The thickness of your fish will determine the length of time it will take to cook. Fish should be flaky when done!
Enjoy with a side of greens.
