Up tonight… another sweaty session!! Hot yoga again, you wonder? Cooking with the broiler on high?? Or maybe a sweaty session located in the, ahem, bedroom? NO! Get your head out of the gutter! Tonight is Zumba time! Olé olé olé! Do they yell that during Zumba? I dunno. But tonight I’ll find out! More to come later…
Sesame Crusted Fish
Fresh white fish
1 Tablespoon sesame oil
1 cup toasted black sesame seeds
1 Tablespoon coconut oil
3 Tablespoons soy sauce
1 Tablespoon rice vinegar
1 teaspoon sesame oil
Cayenne pepper to taste
Rub the fish with sesame oil, then dredge them in the toasted sesame seeds.
Melt coconut oil in a skillet over medium high heat. Add the fish and cook 2-2.5 minutes per side, until cooked through with a crispy crust.
Make dressing by whisking together soy sauce, rice vinegar, sesame oil and cayenne pepper.
Serve fish on top of bed of spinach and pour dressing over the whole dish.
