Sometimes I get the impression that you guys think just because we’re the Sweet Cheeks, we eat all healthy foods all the time. Heehee! *snort* BAAAHAHAHAHAHAHAHAA!!! No. Way. Nor actually would I want to. I love eating Paleo style the majority of the time, for so many reasons – weight management, deliciousness, energy levels, etc. But I live my life by the 80/20 principle. 80% of the time eat Paleo style and 20% of the time eat whatever I want! I am definitely a sugar monster. I love cookies and chocolate and cupcakes and candy and ice cream and… EEEEP!!! Must. Stop. Thinking. About. Sugar! The monster awakens…
Soooo, generally if I’m indulging in a sugar product, I go for it. I’m not big into “Paleo” desserts. If you’re going to eat some dessert, I say just enjoy some of the real deal. But when I came across this recipe from Wellness Mama, I decided to give it a go. This may be considered a Paleo style dessert, but hot dog! is it good!!! Rich and sweet and chocolaty …. my sugar monster approves.
Chocolate Coconut Clusters
1 (5 oz) bag flaked or shredded coconut, unsweetened
2/3 cup melted coconut oil, plus 1 extra Tbsp
1/2 cup almond butter
1 tsp vanilla
1 cup dark chocolate or semi-sweet chocolate chips
In medium bowl, mix coconut flakes, 2/3 cup melted coconut oil, vanilla, and almond butter until well mixed. Using your hands, form into 1 inch balls and put on a plate. Put the plate in the freezer until the clusters harden completely.
Once the clusters have hardened, melt the chocolate in a double boiler with 1 Tbsp coconut oil until smooth. Dip the clusters into the chocolate and put back on a plate or in a small baking dish. Put them into refrigerator to harden.
