Like many of you, I go through phases of things that I eat. I always love fruit and eggs. The other foods are the variables. I go through my phases of bacon, sweet potatoes, spinach, tomatoes, kale, carrots and many other things. Meat comes in and out of my life, but fruit and eggs usually always remain. My morning coffee stays the same, at least for the last year and a half.
Lately I’ve been eating kale salads, mango, goat cheese and crackers, prosciutto and a little bacon. Last week I finally whipped up some meatballs and really enjoyed them. It’s been a while since I have made them as I avoiding cooking meat at home.
Then the latest recipe I hadn’t made in a while, guacamole deviled eggs.
So, my question to you all. What have you been eating lately?
The recipe is a repeat of one I made a long time ago. It’s originally from Mark’s Daily apple. This time I have a much more beautiful photo. I’ll let you all be the judge.
What you will need:
6 hard boiled eggs
1-2 avocados (depending on size)
1/4cup chopped tomatoes
small amount of fresh cilantro
What to do:
1. Boil your eggs.
2. Set them aside to cool.
3. Slice them in half and remove yolks and put into separate bowl
4. In bowl with yolks, add in avocado, chopped tomatoes, cilantro, salt and pepper. Mash until smooth with fork.
5. Stuff each egg half and enjoy!
