Okay, seriously now, Righty and I have been obsessed with goat cheese lately. It’s creamy, rich, smooth and bursting with flavor!! But I understand, not everyone likes goats and cheese as much as The Cheeks. For my next recipe no cheese, I promise!! I super duper cross my heart and cross my cheeks while I’m at it!
2 Teaspoons olive oil
1 pound of medium shrimp, peeled and deveined
2 garlic cloves, crushed or 1 teaspoon of pre-crushed jarred garlic
1 tablespoon of fresh parsely
1/4 teaspoon pepper
12-15 scallions, white and green parts, thinly sliced
6 medium tomatoes, coarsely chopped
Goat cheese crumbles
In a large nonstick frying pan, heat the olive oil over medium-high heat. Add shrimp, garlic, parsley and pepper. Cook and stir for about 1 minute. Add scallions and cook about 2 minutes longer until the shrimp begin to change color.
Stir in the tomatoes and cook 3-4 minutes, until the tomatoes are heat through and softened and the shrimp are pink. Remove from heat and sprinkle with goat cheese crumbles.
