Today is day TWENTY of the Sweet Cheeks 2013 No Sugar Challenge. Congrats to everyone still in the sugar free game! As this month continues I find it easier and easier to say no to sugar. It could have something to do with the ridiculous results that I keep experiencing from living sugar free.
My most recent jaw dropper was this past week at CrossFit. Anyone that has worked out with me knows that I’m strong as hell and can kip my buns off, but anything cardio kicks my tushy. I often find myself wheezing and tense, unable to push through the climax of the workouts. I’ll often take a moment with my hands on my knees as I gasp for more air before I can continue and generally finish as one of the last in the workout.
Monday’s WOD was going to be another cardio kick in the pants. 500m row, 20 sit ups, 400m row, 20 sit ups, 300m row, 20 sit ups, 200m row, 20 sit ups, and 100m row, 20 sit ups. I started in at a medium pace, knowing that I had to pace myself to get through this WOD. After the 2nd set of sit ups I noticed I was feeling good. I was breathing heavy but not gasping. I just kept telling myself deep breath in, deep breath out, keep going, keep moving, push yourself. Before I knew it, the WOD was done and I had finished 2nd in class! WHAT?!! That my Cheekers, is unheard of for Lefty. This sugar free living is rocking my pants off!!! Huh?!! Yeah. =)Is anyone else experiencing unusually spectacular results?
Goat Cheese Apple Burgers
3/4 pound ground grass-fed beef
1/2 red onion, chopped
2 ounces goat cheese crumbles
1 tablespoon Dijon mustard
Salt and pepper, to taste
1/2 Granny Smith apple, shredded or grated
Combine beef, onion, goat cheese, mustard, salt, pepper and apple in a large bowl. Divide the meat evenly into four pieces and form into patties.
Grill, broil or cook the patties until desired doneness.
Enjoy with salad or veggies!
