There’s something big happening at Sweet Cheeks HQ. I mean HUGE. It’s a shift in the Sweet Cheeks universe. Shirley and I will be moving into our own separate apartments. Bam! Yup, that’s it. After 3 years of sharing a kitchen, we’ll actually each have our own. (Well, Shirley will be sharing hers with Ginger!) We both just started looking for new places. Wish us luck! Paleo Orange Chicken
1 lb. boneless, skinless chicken thighs (cut into bite size pieces)
3 Tablespoons coconut oil
Juice from 2 oranges
Zest from 1 orange
1 teaspoon grated fresh ginger
3 Tablespoons soy sauce
1 teaspoon chili sriracha
Sprinkle of arrowroot
3 green onions, chopped
In a medium pot, add orange juice, zest, ginger, soy sauce and sriracha. Mix well and simmer over medium-low heat for about 7 minutes. Add a sprinkle of arrowroot. Be sure it is only a sprinkle and be sure you are mixing the whole time or else your sauce can get clumpy. Not good. Set sauce aside.
Melt the coconut oil in a skillet over medium high heat and then add the chicken. Cook until done.
Add the chicken into the orange sauce. Mix to coat. Serve with chopped green onions on top. This dish tastes great over cauliflower rice or broccoli.
