This brownie tasted so good I thought I was cheating. It might be that I’ve been eating so clean that any dessert like thing is AMAZING, or it might be that they are really amazing. I swear they are a truly legit treat. Legit meaning no processed sugar, to be clear there is sugar in the dates.  Emily made these the other day and I tried one, then asked for the recipe. She said Jenny Peddie made the, then I found out that the Original Recipe came from Paleo Spirit. Well, thank you to all that shared, I truly enjoyed this treat!

What you will need:

10 medjool dates

1 cup of unsweetened applesauce

3 eggs

1/2 cup coconut oil

2 teaspoons vanilla extract

1/2 cup coconut flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon fine celtic sea salt

1/2 cup strong brewed coffee

1/4 cup chopped walnuts

1/4 shredded coconut for topping

What to do:

In a food processor puree dates. Then add in applesauce. In another bowl mix together date/applesauce mixture  with eggs, coconut oil and vanilla and coffee. Then add in dry ingredients making sure to mix thoroughly.  Add in walnuts and spread into a 8×8 pan greased with coconut oil and spread evenly with spatula. Sprinkle with coconut. Bake for 30-35 minutes until fork/toothpick comes out clean.

They were a little crumbly, but not so crumbly that I didn’t want to eat them. I also imagine you could use decaf coffee if you or whomever are eating the brownies have sensitivities to caffeine.
