Happy Easter everyone!!! If you haven’t eaten enough Peeps, chocolate bunnies, jelly beans, and all things sugary and Easter… whip up a batch of these babies this week! My favorite food blogger, The Civilized Caveman, has done it again. He never ceases to please me with his recipes. I don’t usually bake Paleo style goods, but this looked so tempting I just had to give it a go. They’re so delicious, I ate them all in 24 hours. That I would not recommend doing. Burp!
Apple Raisin Scones
2 cups almond flour
1 cup apple, chopped (Caveman says minced, either works)
1/4 cup shredded unsweetened coconut
1/4 cup raisins
1 tablespoon cinnamon
1 teaspoon baking soda
pinch of sea salt
2 tablespoons honey
Preheat oven to 375 degrees.
In a large bowl, combine almond flour, apple, raisins, shredded coconut, cinnamon, baking soda, and sea salt.
In a smaller bowl, mix the egg and honey until well blended and then add it to the dry ingredients. Mix well.
Get in there with your hands and make sure the dough is thoroughly mixed, then divide it in half. Shape into circles and flatten them to be about 1/2 inch thick.
Cut each circle into 6 pizza sliced scones. Place on a baking dish or non stick cookie sheet.
Bake for 10 minutes or until golden brown and cooked through.
