it’s not oatmeal, it’s NOTmeal


Two weeks ago when I went to my Whole Life Challenge Food Co-op, Laura had brought us some notmeal. It was amazing. I ate mine with eggs and was ready to replicate the next day. Laura’s notmeal was made with Acorn squash as the base and had the following ingredients that I’ve listed below.  Now I’m sharing with you my version of notmeal. I hope your ready because I found this to be delicious!

Butternut squash Notmeal

serves about 4

2 packages Trader Joes butternut squash (it’s already peeled and cubed)

olive oil- for roasting



1 Tbs crunchy almond butter (adds a little texture to it)

Preheat oven to 400 degrees, then bake butternut squash, tossed lightly with olive oil for 30-45 minutes. Make sure it gets super tender and soft. When done remove from oven and mash with a fork. Add in cinnamon and nutmeg and a scoop of nut butter. Mix well.

And there you go. I served mine fresh with egg, then easily reheated leftover in the microwave.   You could use acorn squash too, I just found butternut squash was easy and ready to go!
