The other day as I was in a rush, I whipped up something quick and tasty from the few random ingredients I had in my fridge. No recipe, no time to cook, no planning … just let the cameras roll!
4 cups shaved brussels sprouts (you could also use whole brussels and cube them)
4 pieces of bacon, cooked and chopped
Handful of sun-dried tomatoes
2 Tablespoons olive oil
Salt and pepper
In a large skillet over medium high heat, add the olive oil and brussels and mix them together. Continue cooking and stirring. Add the tomatoes and salt and pepper to taste. Mix well. Cook until brussels are tender and cooked to liking.
Mix in the chopped bacon, or crumble on top.
