This week I’m not sharing an amazing new inventive recipe. In fact, there is no recipe at all, just a little sharing about what’s going on, what I’ve been eating, or not eating. As some of you know I’m in the middle of the Whole Life Challenge right now, it’s been super helpful to help my clean up my eating as january was sugar free, and then I had a couple weeks of sugar indulgences. The Whole Life Challenge is 8 weeks of daily workouts, mobilization and getting rid of sugar, grains, alcohol and any processed foods. Now, I’m back on the straight and narrow and keeping things clean. There are definitely some staples in my diet, (see above) but I do like to mix it up from time to time. Above is a pretty normal breakfast for me, eggs, avocado, sweet potato and tomato. Another normal breakfast of mine is eggs and fruit. My sweet potato eating goes in waves, as I’ve been gearing up for the Marathon I though, “why limit my sweet potatoes right?”.
I’ll be honest with you Cheeks, righty does not do a lot of meal prep. My cooking really goes in waves. I love going to the grocery store, seeing whats there, what tempts me, then buying it. Then I usually think of creative ways to use it, or not so creative. Above you see today’s breakfast, tonight for dinner was kale salad (from previous post) and steak with sautéed onions. Both very tasty and very, very simple.
This challenge has got me back into the kitchen more, but when I’m not whipping up something special for you cheeks or the kids, I keep it pretty simple, especially recently. Lately I’ve been staying pretty busy, as I mentioned before, we are in the middle of the Whole Life Challenge, its week two of the CrossFit Open, my first marathon is coming up in just a few days and I’m looking for a new home, oh and I had a birthday just a few days a go, I also have a very special 3rd birthday coming up at the beginning of next month which I have an invitation to the party in Oregon. Yep, staying busy.
