Pot o’curry!

One pot makes things soooo much easier. I know I don’t have to tell you all. It’s really quite simple, all you need is a few minutes to chop, spice it up and let it go, then onto other business for the day.  Today I made curried chicken, actually, its cooking as I’m writing this. Hoping I have time this afternoon to grab a quick photo to post it with. Two nights ago I used ground turkey and made something similar on the stove top and it was great. (welcome back guar gum) Now that the Whole Life Challenge has finished, I’m bringing a few more items back into my life.  Actually, I’m just living a bit more freely not being super strict with what is in things. I’m still making conscious choices to stay away from sugar, dairy and grains, except when I decide its ok.  This recipe below is simple and I’m sure you will love it.


Coconut curried chicken

1 onion, thinly sliced

3 carrots, roughly chopped

1# package boneless, skinless chicken thighs, fat trimmed and  cut into large chunks

1 orange bell pepper, sliced

1 can coconut milk

salt/pepper to taste

1 TBS cumin

1 TBS curry powder

1 Tsp chili powder

5 cloves of garlic


What to do:

In a crock pot add in onions, chicken, salt, pepper, carrots, peppers, seasonings and coconut milk. Cover with lid and cook for a couple of hours until chicken is done and vegetables are tender.  Enjoy served with brocoli or cauliflower rice.
