1 red onion, diced
1 cup arugula
1/4 cup parsley
1/4 cup fresh basil leaves
1 lb ground grass fed beef
Salt and pepper to taste
3 Tablespoons olive oil
In a food processor, pulse onion, arugula, parsley and basil until blended. In a large bowl, combine the herb mixture with the beef, then salt and pepper to taste. Be sure to mix everything thoroughly and then roll into golf ball sized meatballs.
In a large pot, put the spaghetti sauce over low heat.
In a large non-stick skillet, heat up the oil over medium high heat and then add the meatballs. Cook for about 10 minutes, stirring around so they are sort of browned.
Add the meatballs to the spaghetti sauce and partially cover the pot. Let it cook for 30 minutes or until meatballs are done.
