The week isn’t even over and I’ve worked out 4 times. I did CrossFit 3 times and took a nice little run today. I have to admit, it feels good to be back. I was working out, but just not consistently. I’m also back to cooking and eating healthy (ish) So, I whipped up this dish last Saturday when I didn’t know what else to make. I have always loved spaghetti, but the noodles are a true no no. This time I used zucchini noodles I just put it in the food processor, used the grater blade, cranked them out, cooked up the sauce, and voila… dinner is served. Beautiful too I might add.

Spicy meat marinara

3 medium size zucchini

1 package organic ground beef

1 package spicy italian sausage (removed from casing)

1 onion chopped

1/2 package sliced mushrooms

1 can tomatoes paste, plus 2-3 cans water

1 1.2 teaspoons oregano

2 teaspoons garlic powder

salt and pepper to taste

fresh basil leaves

What to do:

In a large fry pan brown sausage and ground beef. Next, add in onions and cook until soft. Add in mushrooms, tomato paste, water and all seasonings. ¬†Cook uncovered for about 15, then covered for at least 15 minutes, making sure to stir every so often so it doesn’t stick. While sauce is cooking grate zucchini in a food processor.(or by hand…it might take a little while) then spread noodles evenly on baking sheet and season with salt. Broil for 3-4 minutes then remove from oven, noodles will be al dente. Serve noodles topped with hot sauce. Garnish with fresh basil if desired.
