For those of you that have followed us for a while, you probably remember when I, Lefty got engaged to Mr. Cheek. Well unfortunately a small while back Mr. Cheek and I decided to get unengaged. But don’t fret, it’s all good. And Mr. Cheek knows he will always hold a very special place in my heart : ) It wasn’t meant to be at the time but I wanted to explain to you all so everyone wouldn’t be confused about my next big news…
I got my own headquarters! Yes, it’s bittersweet to leave my Righty and Ginger, but it’s heavenly to have my own place, space, and kitchen! Plus of course the always fabulous perk to living alone… the ability to walk around in nothing but my cheeks!! You know what I’m talking about.
So onward with the adventures of a single solo Left Cheek, cooking her way through this fabulous journey of life!
Crockpot Apple and Sweet Potato Delight!
4 cups of sweet potatoes, peeled and sliced medium thin
4 cups apples peeled, cored, and sliced medium
2 tablespoons coconut oil
1 tsp cayenne pepper
1 Tbsp cinnamon
Pinch sea salt
1 can of full fat coconut milk, chilled
In a large bowl, add apples, potatoes and seasonings, then mix well making sure everything is evenly coated.
Pour the mixture into a crockpot.
Add your coconut oil to the top so it melts down during cooking.
Cook on high for 3 hours or low for 4. Cooking times will vary depending upon crockpot and thickness of slices.
In the meantime, scoop the thick coconut milk out of the top of the can, be sure to leave the coconut water. Beat in blender or with a whisk until thick and fluffy.
Serve apples and potatoes with a scoop of coconut whip on top.
