Pesto Tuna Stuffed Peppers
2 cans of tuna in water
3 bell peppers
½ cup of pesto (I used prepared pesto)
2 tomatoes, chopped
½ cup of goat cheese (optional)
Sea salt and pepper, to taste
Preheat the oven to 390°F. Cut the peppers in half length or width wise and take out the seeds.
Mix the chopped tomatoes with the tuna, pesto and sea salt and pepper. Stuff each pepper with the mixture, then sprinkle the cheese on top.
Bake in the oven for 20-25 min until the cheese is golden brown.
