Easy egg recipe

I was at a friend’s house and we were talking food. So, I got a little inspired to get cooking again. She was telling me about a sweet potato casserole.  I went home, grabbed some eggs, a sweet potato and some seasonings. And the above is what I made. Simple, delicious and really easy.

What you will need:

1 dozen eggs

1 sweet potato

salt

pepper

cumin

cinnamon

chili powder

coconut oil

Preheat oven to 350

What do to:

Grate sweet potato  (I used a food processor) then microwave grated potato for 1-2 minutes. Next coat muffin tin with coconut oil, I used my finger to rub it in. In a separate bowl season sweet potato and mix to make sure all seasoning are incorporated.   Put a little sweet potato in each greased tin and bake for about 3-4 minutes. While the potato is baking, whip eggs in a bowl until light and fluffy. Then Remove muffin tin from oven, and evenly divide the egg batter between the cups. Carefully put it back in the oven and bake for about 12 minutes or until eggs are firm. They will puff up large, then settle back down.

Serve warm or cold with greens!
