Pork Chops



Hello Cheeks!

It’s me, Shirley, aka Righty! So- I’ve been cooking, working out, running CrossFit Kids camps, walking Ginger, seeing my friends and all around enjoying life. What I have not been doing is posting to my blog. So, I’m  gonna try something new, instead of always thinking I need a full recipe, I might just post what I’m eating as a hope to be an inspiration to you all. And if you comment on the blog, I can get feedback and learn from all of you too.

The Whole Life Challenge is here  and I’m excited because my sister is going to take part in it. Last challenge my friend Tony took part and I feel he made some amazing changes in life during the challenge. The hardest part is getting started. So,  for any of you that are looking to change up what  you eat or how you move, sign up, it’s easy and you might learn a little bit about you!

Now, onto what I have prepared for you all. I made pork chops. I haven’t bought them in a while, and always forget how easy they are. But I put them together quite simply and am enjoying them still! Check it out.


What you will need:

3 pork chops- from the best pig you know.

1 onion

1 Tbs crushed garlic

1 Tbs coconut oil

1 can stewed tomatoes

spanish green olives- as many as you like

capers- as many as you like


salt, pepper, cumin, paprika, oregano


What to do:

Heat a cast iron skillet to medium/high heat.

Slice onions, then coat pan with coconut oil and add in onions, cook for a couple minutes.

Next season pork chops with salt, pepper, cumin, paprika, and oregano and sear both sides in skillet- a couple minutes on each side.

Reduce heat and add in garlic and stewed tomatoes, capers and some olives. Cover with lid and cook until chops reaches 145 degrees.

Remove from pan, plate and garnish with more spanish olives.
