As a lot of you know I’ve shied away from cooking meat. Not the basics, or the simple stuff, but I do get intimidated with a nice cut of steak. Many years ago George Forman was my God. He guided my way through chicken, chicken, chicken and oh yeah, a few peanut butter and apple sauce grilled sandwiches. But that was back in the day. Now the Foreman is gone and I don’t own a grill yet, so, it’s the oven, stove top and crock pot that I’m working with.  All very useful tools if done right. Today I share with you ribs from the crock pot. I’ve made these twice now. The seconds time had a little twist, which I thoroughly enjoyed. I sweetened them up a bit.

Growing up my mother would ask “what do you want for your Birthday dinner?” Every time I would say BBQ ribs, corn on the cob and potato salad, and my amazing mom would make it. I didn’t really know the trouble she went through to make the ribs, but thinking back- it was quite a process. Netarts Oregon doesn’t get super warm, and grilling outside in the cold, isn’t the most efficient method of grilling. Mom often started the ribs in the oven, then transferring them to the charcoal weber, or it could have been vice versa. Either way my mom made special effort to please me. I do remember a few dinners that were later than planned just to make MY birthday ribs. Thank you mom.  So, my indoor rib recipe is below.

My Sweet Paleo Ribs

1 rack of baby back ribs

1 onion

1/4-1/3 cup chopped dried apricots



ground mustard

smoked paprika


a little bit of water

Crock pot and skillet (for browning)


What to do:

Cut ribs into 2-3 rib segments. Then Season the ribs with the above spices. I didn’t measure but covered them throughly in spice.  Slice onions and chop apricots and place them in crock pot. Turn crock pot onto low heat. In a skillet on high heat, sear seasoned ribs then place in crock pot. Add a little bit of water and cook for about 3-4 hours. Until tender.

They should be fall off the bone tender. As you can see, Ginger could smell their goodness!
